Brown rice flour is a very nutritious flour, it acts as an excellent thickener in soups and sauces but always needs to be combined with a binding agent when used in baking because it tends make things crumbly, we find guar gum works well for this.

    rice in general is a great thickener for soups. It has some of the better properties of wheat-based product and modified starches in terms of stability, freezability and palatability. Rice, being very easy to digest compared to wheat, is a great alternative to a standard roux for soup. It cooks out to a silken texture, and I have yet to hear of anyone with a rice allergy!
